Pumpkin Coffee Cake with Cream Cheese Glaze Recipe

Wintertime means pumpkin time, so I’m here to share a delicious pumpkin recipe with all of you! Nothing is better than a slice of coffee cake to start off my day, so add some pumpkin to your favorite morning treat to make it festive for the season. Here is my super easy and scrumptious pumpkin coffee cake with cream cheese glaze recipe to make your winter mornings more enjoyable!

Preheat your oven to 350˚F to begin baking! Prepare a 9-inch pan by spraying it with nonstick spray and a sprinkle of flour to stop your cake from sticking.

Start off by making your crumb toping by tossing together the flour, brown sugar, cinnamon, and salt. Add in the cut butter, and mix with a fork or pastry blender until crumbs and clumps are formed. After you have your ideal crumb topping, set aside and begin the cake batter.

Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until well combined. Once the dry ingredients are thoroughly mixed, whisk the pumpkin puree, brown sugar, vegetable oil, maple syrup, and milk in a separate bowl. Finally, combine the wet ingredients with the dry ingredients and stir until just combined. Do not over mix the batter or it will be too thick.

Pour the batter into the prepared baking pan and spread evenly. Spread the crump toping evenly on top of the batter, and bake the cake for around 30 minutes.

Prepare the cream cheese glaze while the cake is in the oven by whisking together powdered sugar, melted cream cheese, vanilla, and milk. Stir until the mixture is completely smooth.

Once the cake is out of the oven, drizzle the glaze on top of the cake. Put the glaze on the cake in two coats to keep the cake from becoming moist or soggy. Initiate by applying a thin later of glaze, and then add an additional coat once the first hardens!

½ Cup All-Purpose Flour

¼ Cup Unsalted Butter (Cold)

½ Cup Packed Dark Brown Sugar

2 Teaspoons Ground Cinnamon

¼ Teaspoon Salt

1 Teaspoon Baking Soda

½ Teaspoon Baking Powder

½ Teaspoon Salt

2 Teaspoons Ground Cinnamon

½ Teaspoon Ground Nutmeg

¼ Teaspoon Ground Cloves

1 Cup Pure Pumpkin Puree

½ Cup Packed Dark Brown Sugar

½ Cup Vegetable Oil

¼ Cup Pure Maple Syrup

¼ Cup Milk

Cream Cheese Glaze

½ Cup Powdered Sugar

1 Ounce Cream Cheese (Melted)

1 Teaspoon Vanilla

1 Tablespoon Milk
